This Japanese-style blade takes its name from the “three virtues” of slicing, dicing, and mincing. An all-purpose chef knife, the santoku features a generous width for easy scooping while the moderate length and ergonomic design make it extremely agile on the cutting board.
A revolution in blade design.
The Teton Edge Santoku represents a revolution in the history of blade design. The “Edge” replaces the traditional santoku “dimples” with an etched semblance of the Teton Mountain range. As with the dimples, the etching helps the blade slice smoothly through food without sticking- but the Teton Edge does it even better. Traditional machine-grinding the dimples can disrupt and distort the precision of the steel’s heat treatment. The proprietary process used to etch the “Edge” enhances the performance while optimizing the steel. The “Teton Edge” celebrates the spirit of Jackson Hole, New West Knifeworks's home, both visually and functionally, redefining the cutting edge of peak performance.

Desert Ironwood
To care for this material, we recommend avoiding harsh soaps or solvents on the handle (a little dish soap now and then is fine). The deep colors and rich shine quickly come back to life with a bit of mineral oil applied with a rag. No lacquer or sealant is applied to the ironwood, so it will readily absorb the oil and look shiny and new all over again.
