Description

Elegant utility: power and grace in one.

Conventional wisdom says you need two knives in the kitchen: a paring knife and a chef knife. The Petty challenges that notion by handling both roles with "the perfect balance of power and grace (Bon Appetit)." Excelling at peeling, paring, boning, carving and other delicate work for vegetables, fruits, and herbs the Petty also takes on some of the slicing and dicing jobs of a larger chef knife.

Perfect complements: steel and design.
The unique qualities of powder metal steel are amplified in this particular blade design. In addition to being extraordinarily sharp, the steel's toughness allows for an extremely thin, agile blade that is still highly durable. The combination of elements- sharpness, thinness, and durability- results in an elite tool that glides through food like an extension of the hand.

Desert Ironwood: Beauty and Strength
Like cooking, making knives depends on using the best ingredients. The petty knife features the highest performing knife steel on the market- S35VN "Powder Metal" steel. This high carbon, alloyed steel has it all: elite sharpness, toughness, edge-holding, stain resistance, and sharpenability. Our knives are made in the US with American steel and backed by a lifetime guarantee.

As the first major addition to our chef knife collection since switching to G10 handles for our "G-Fusion" line, New West KnifeWorks is proud to offer our line of Desert Ironwood S35VN chef knives. After months of testing various hardwoods and laminate woods for durability, water resistance, and overall look and feel, the richly textured desert ironwood rose to the top. These richly grained handles and super sharp blades will impress the most selective chef knife aficionados.

Key Features

Knife Art

The Teton Edge Santoku represents a revolution in the history of blade design. The "Edge" replaces the traditional santoku "dimples" with an etched semblance of the Teton Mountain range.

High Performance

As with the dimples, the etching helps the blade slice smoothly through food without sticking- but the Teton Edge does it even better.

American Made

G-Fusion handles are made with G10: an aerospace-grade, fiberglass epoxy composite material that is virtually bomb-proof.
