The Paring Knife: "America's Best"
The search for the perfect paring knife is over. And for those who only use a paring knife, this is the only one you will need in your kitchen. Unlike many paring knives which are very "pointy" and dig into fruit and vegetables, the G-Fusion paring knife has a modified Drop Point Design. This results in a more forgiving knife when you are coring an apple or removing the eyes from potatoes. Once you get used to this unique shape, you will love it. But don't assume that just because the blade is small, the handle should be dinky too. Our paring knife handle is a full four inches, which lends it firm agility in the hand.
S35VN: America's best steel
Like cooking, making knives depends on using the best ingredients. The G-Fusion line features the highest performing knife steel on the market-- S35VN “Powder Metal” steel. This high carbon, alloyed steel has it all: elite sharpness, toughness, edge-holding, stain resistance, and sharpenability. G-Fusion knives are made in the US with American steel and backed by a lifetime guarantee.
Desert Ironwood
As the first major addition to our chef knife collection since switching to G10 handles for our "G-Fusion" line, New West KnifeWorks is proud to offer our line of Desert Ironwood S35VN chef knives. After months of testing various hardwoods and laminate woods for durability, water resistance, and overall look and feel, the richly textured desert ironwood rose to the top.

Key Features
Knife Art
The Teton Edge Santoku represents a revolution in the history of blade design. The "Edge" replaces the traditional santoku "dimples" with an etched semblance of the Teton Mountain range.
High Performance
As with the dimples, the etching helps the blade slice smoothly through food without sticking- but the Teton Edge does it even better.
American Made
G-Fusion handles are made with G10: an aerospace-grade, fiberglass epoxy composite material that is virtually bomb-proof.
