Description
For folks who find a traditional 8-inch chef cumbersome or intimidating, the graceful blade shape, tapered tang, and super thin blade grind turn this precision instrument into an extension of your hand. Powder metal steel allows this thin, agile blade to meld power with precision on the professional line and home cutting board alike. Thick steel in front of the handle makes for a blister-free pinch grip. The relatively narrow width of the blade is a departure from the recent fad of making knives extra wide. This makes the "Light-Speed 8" more nimble for slicing and turning cuts while still leaving plenty of clearance for the knuckles. Also, this is the only kitchen knife to make the Kessel Run in under 12 par-secs. More about the 8" Chef.
Chopper changes chores into a joy
For decades, the Chopper has been a customer favorite for holidays, birthdays, graduations, weddings, and housewarming parties. A very manageable size, stout handle, and curved belly are ideal for making things like mirepoix. The unique shape makes it a welcome addition to just about any collection. A beautiful gift that gets used every day is a constant reminder of affection AND a wonderful incentive to fall in love with cooking and a healthier lifestyle. The editors at Paleo Magazine summed it up best in their review of the Chopper:
"Any dedicated home cook knows that a good knife can make the difference between a meal cooked with finesse and enjoyment and one that’s a struggle to get on the table. With Paleo in particular, where fresh food prepared at home is the key to greater health, a good knife is paramount to making such a lifestyle a success." Paleo Magazine

S35VN: Ultimate Knife Steel
Like cooking, making knives depends on using the best ingredients. The Desert Ironwood line features the highest performing knife steel on the market- S35VN “Powder Metal” steel. This high carbon, alloyed steel has it all: elite sharpness, toughness, edge-holding, stain resistance, and sharpenability.
Desert Ironwood
Please note: this is a natural material and each handle will have unique grain patterns.
As the first major addition to our chef knife collection since switching to G10 handles for our "G-Fusion" line, New West KnifeWorks is proud to offer our line of Desert Ironwood S35VN chef knives. After months of testing various hardwoods and laminate woods for durability, water resistance, and overall look and feel, the richly textured desert ironwood rose to the top.

Key Features
Knife Art
The Teton Edge Santoku represents a revolution in the history of blade design. The "Edge" replaces the traditional santoku "dimples" with an etched semblance of the Teton Mountain range.
High Performance
As with the dimples, the etching helps the blade slice smoothly through food without sticking- but the Teton Edge does it even better.
American Made
G-Fusion handles are made with G10: an aerospace-grade, fiberglass epoxy composite material that is virtually bomb-proof.
